Pomegranates
Deep crimson, jewel-like and complex — sweet and sweet-tart varieties.
Our pomegranates grow in sun-drenched orchards in Agsu, where we balance strong sunlight with the protective shade of the canopy to prevent sunscald and keep the rind sound. Pomegranates are sensitive to swings in soil moisture, so precise irrigation control prevents cracking and keeps the arils large and full of juice.
We time the harvest by the balance of sugar (Brix) and acidity inside the fruit, not by skin colour alone. Every fruit is clipped by hand at the stem, never pulled, to keep the crown intact and the skin free of micro-tears. In high-humidity cold storage the rind does not dry out and the arils stay firm and juicy, so we supply pomegranates until March.

Good to know
Punicalagins and vitamin K
Pomegranates contain punicalagins, polyphenol antioxidants found mostly in the peel and juice. They are also a source of vitamin K and provide vitamin C and potassium.
Ruby arils
The ruby arils are crunchy, juicy and sweet-tart, a refreshing snack on their own. To free them easily, score the skin, break the fruit open in a bowl of water and loosen the arils: they sink, while the pith floats.
Perfect pairings
Pomegranate brings bright sweet-tart bursts to rich dishes. Scatter the arils over fire-roasted aubergine with tahini, fold them into a herb and bulgur salad, or reduce the juice into a thick, tangy sauce like Azerbaijani narsharab, perfect with slow-roasted lamb, poultry and grilled sturgeon.
